Instructions
- Preheat Oven: Preheat the oven to 180C/350F. Line a large baking tray with parchment paper to prevent sticking and ensure easy cleanup.
- Combine Ingredients: In a large mixing bowl, add the rolled oats, peanut butter, mashed banana, and shredded zucchini. Mix well until all ingredients are thoroughly combined. If using chocolate chips, gently fold them through the mixture at this point.
- Shape Cookies: Form 16 balls of dough from the batter. Place each ball on the prepared baking tray and press down to flatten into a cookie shape. Optionally, top each cookie with extra chocolate chips for added texture and flavor.
- Bake: Bake the cookies in the preheated oven for 12-15 minutes, or until the edges turn golden brown, indicating they are cooked through.
- Cool: Allow the cookies to cool on the baking tray for 10 minutes to firm up slightly. Then transfer them to a wire rack to cool completely before serving or storing.

- Use gluten-free rolled oats to make the recipe gluten-free if needed.
- Peanut butter can be substituted with any nut or seed butter to alter flavor or accommodate allergies.
