- 3 medium zucchinis, sliced into half-moons
- 1 red bell pepper, diced
- 1 can (14.5 ounces) diced tomatoes with green chilies
- 1 can (8 ounces) tomato sauce
- 1 teaspoon Italian seasoning
- 1/2 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup fresh parsley, chopped
Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- Cook the beef mixture: In a large skillet, heat olive oil over medium-high heat. Add the ground beef and cook until browned. Stir in the onion and garlic. Add zucchini and red bell pepper, sauté until tender.
- Combine ingredients: Stir in diced tomatoes, tomato sauce, Italian seasoning, chili powder, salt, and pepper. Simmer for 5 minutes.
- Assemble and bake: Transfer mixture to baking dish. Sprinkle cheeses over the top. Bake for 20-25 minutes until cheese is melted and bubbly. Garnish with parsley before serving.
