For the White Queso Dip:
- 1 tablespoon butter
- 1 small white onion, finely diced
- 2 cloves garlic, minced
- 1 jalapeño, seeded and finely chopped
- 1/2 cup whole milk
- 1/4 cup heavy cream
- 8 oz white American cheese, cubed
- 4 oz Monterey Jack cheese, shredded
- 1 (4 oz) can diced green chiles
- 1/4 teaspoon ground cumin
- Salt to taste
- Chopped cilantro and diced tomatoes for garnish (optional)
Instructions
- In a medium saucepan over medium heat, melt the butter. Add the diced onion and jalapeño and cook for 3–4 minutes until softened.
- Stir in the garlic and cook for another 30 seconds.
- Pour in the milk and heavy cream, bringing the mixture just to a simmer.
- Reduce heat to low, then add the white American cheese and Monterey Jack cheese gradually, stirring constantly until melted and smooth.
- Stir in the diced green chiles and cumin.
- Season with salt to taste.
- Keep warm until ready to serve and garnish with chopped cilantro and diced tomatoes if desired.
Notes
- For extra heat, add a pinch of cayenne pepper or use hot green chiles.
- You can thin the dip with more milk if needed.
