Ingredients

Scale

Cake

  • 1 1/2 cups (225g) pitted dates, chopped
  • 1/2 cup (120ml) freshly squeezed orange juice (about 23 oranges)
  • Zest of 2 oranges
  • 1/2 cup (120ml) vegetable oil
  • 3 large eggs
  • 1 cup (200g) brown sugar, packed
  • 1 3/4 cups (220g) all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground nutmeg

Pecan Crunch Topping

  • 1/2 cup (60g) chopped pecans
  • 2 tbsp (25g) brown sugar
  • 1 tbsp (14g) cold butter, cubed

Orange Glaze

  • 1/4 cup (60ml) freshly squeezed orange juice
  • 2 tbsp (30g) powdered sugar

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to ensure it is hot enough for baking the cake evenly.
  2. Soak Dates: Soak the chopped dates in 1/2 cup of freshly squeezed orange juice for about 10 minutes to soften and infuse them with citrus flavor.
  3. Mix Dry Ingredients: Sift together the all-purpose flour, baking powder, baking soda, salt, ground cinnamon, ground ginger, and nutmeg in a bowl. This ensures even distribution of leavening agents and spices.
  4. Combine Wet Ingredients: In a large mixing bowl, whisk together the vegetable oil, eggs, brown sugar, and orange zest until the mixture is smooth and well combined.
  5. Combine Batter: Fold the soaked dates into the wet mixture carefully, then gradually add the sifted dry ingredients, mixing gently until just combined to avoid overmixing.
  6. Prepare Pecan Topping: In a small bowl, mix chopped pecans, brown sugar, and cold cubed butter to create a crumbly pecan crunch topping.
  7. Fill and Top Cake Pan: Pour the batter into a prepared 9-inch round cake pan, then evenly sprinkle the pecan crunch topping over the batter.
  8. Bake Cake: Bake the cake in the preheated oven for 45–50 minutes or until a toothpick inserted in the center comes out clean, indicating it is fully cooked.
  9. Make Orange Glaze: While the cake bakes, prepare the orange glaze by mixing 1/4 cup freshly squeezed orange juice with powdered sugar until smooth.
  10. Cool and Glaze: Allow the cake to cool for 10 minutes in the pan, then transfer it to a wire rack. Drizzle the orange glaze over the top while the cake is still slightly warm for an extra burst of flavor.

Notes

  • Ensure the dates are chopped finely so they blend well into the batter.
  • Use fresh oranges for the best flavor in both the cake and the glaze.
  • Do not overmix the batter to keep the cake tender and moist.
  • Allow the cake to cool slightly before glazing to prevent the glaze from soaking in too quickly.
  • Storage: Keep the cake in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
