For the Dough:

  • 2 1/4 teaspoons active dry yeast
  • 1 cup warm almond milk (110°F/43°C)
  • 1/4 cup coconut sugar
  • 1/3 cup coconut oil, melted
  • 3 cups all-purpose flour
  • 1/2 teaspoon salt

For the Filling:

  • 3 tablespoons coconut oil, melted
  • 1/4 cup coconut sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon matcha powder
  • 2 tablespoons black sesame seeds

For the Glaze:

  • 1/2 cup powdered sugar
  • 1–2 tablespoons plant-based milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Activate Yeast: In a small bowl, combine warm almond milk, yeast, and a pinch of sugar. Let it sit for 5–10 minutes until foamy, indicating the yeast is active.
  2. Make Dough: In a large mixing bowl, combine flour, salt, coconut sugar, melted coconut oil, and the yeast mixture. Knead until smooth and elastic, about 8–10 minutes.
  3. First Rise: Cover the dough and let it rise in a warm place for 1–1.5 hours until doubled in size.
  4. Preheat Oven & Prepare Dough: Preheat the oven to 350°F (175°C). Roll the dough into a 12×8 inch rectangle.
  5. Add Filling: Brush the dough rectangle with melted coconut oil, then sprinkle the filling evenly over the surface, ensuring the matcha, cinnamon, coconut sugar, and black sesame seeds are well distributed.
  6. Form Rolls: Starting from the long edge, roll the dough tightly into a log and cut into 9 equal rolls.
  7. Second Rise: Place rolls in a greased 9×9-inch baking dish, cover, and let rise for another 20–30 minutes.
  8. Bake Rolls: Bake the rolls for 25–30 minutes until golden brown on top.
  9. Prepare Glaze: Whisk together powdered sugar, plant-based milk, and vanilla extract until smooth.
  10. Glaze & Serve: Drizzle the glaze over the warm rolls before serving. Enjoy best when served warm.
