For the Dough:
- 2 1/4 teaspoons active dry yeast
- 1 cup warm almond milk (110°F/43°C)
- 1/4 cup coconut sugar
- 1/3 cup coconut oil, melted
- 3 cups all-purpose flour
- 1/2 teaspoon salt
For the Filling:
- 3 tablespoons coconut oil, melted
- 1/4 cup coconut sugar
- 1 teaspoon ground cinnamon
- 1 tablespoon matcha powder
- 2 tablespoons black sesame seeds
For the Glaze:
- 1/2 cup powdered sugar
- 1–2 tablespoons plant-based milk
- 1/2 teaspoon vanilla extract
Instructions
- Activate Yeast: In a small bowl, combine warm almond milk, yeast, and a pinch of sugar. Let it sit for 5–10 minutes until foamy, indicating the yeast is active.
- Make Dough: In a large mixing bowl, combine flour, salt, coconut sugar, melted coconut oil, and the yeast mixture. Knead until smooth and elastic, about 8–10 minutes.
- First Rise: Cover the dough and let it rise in a warm place for 1–1.5 hours until doubled in size.
- Preheat Oven & Prepare Dough: Preheat the oven to 350°F (175°C). Roll the dough into a 12×8 inch rectangle.
- Add Filling: Brush the dough rectangle with melted coconut oil, then sprinkle the filling evenly over the surface, ensuring the matcha, cinnamon, coconut sugar, and black sesame seeds are well distributed.
- Form Rolls: Starting from the long edge, roll the dough tightly into a log and cut into 9 equal rolls.
- Second Rise: Place rolls in a greased 9×9-inch baking dish, cover, and let rise for another 20–30 minutes.
- Bake Rolls: Bake the rolls for 25–30 minutes until golden brown on top.
- Prepare Glaze: Whisk together powdered sugar, plant-based milk, and vanilla extract until smooth.
- Glaze & Serve: Drizzle the glaze over the warm rolls before serving. Enjoy best when served warm.
