Ingredients
Scale
Dry Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
Wet Ingredients
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup pineapple juice
- 1 cup crushed pineapple, drained
Glaze
- 1 cup powdered sugar
- 2–3 tablespoons pineapple juice
Instructions
- Prep the Pan: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or bundt pan with butter or non-stick spray. For an extra crunch, optionally sprinkle the pan with shredded coconut or chopped pecans before adding the batter.
- Mix Dry Ingredients: In a medium-sized bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt to evenly distribute the leavening agents and salt throughout the flour.
- Whisk Wet Ingredients: In a separate large bowl, beat together the granulated sugar, vegetable oil, eggs, and vanilla extract until smooth and creamy. Then, stir in the pineapple juice and drained crushed pineapple until fully combined to infuse the batter with moisture and pineapple flavor.
- Combine and Bake: Gradually fold the dry ingredients into the wet mixture using a spatula, mixing just until there are no streaks of flour remaining. Pour the batter into the prepared baking pan, smoothing the top evenly. Bake in the preheated oven for 30 to 35 minutes, or until the cake turns a golden brown color and a toothpick inserted in the center comes out clean.
- Cool and Glaze: Remove the cake from the oven and allow it to cool completely on a wire rack. Meanwhile, prepare the pineapple glaze by mixing the powdered sugar with pineapple juice little by little until a smooth, pourable consistency is achieved. Drizzle the glaze evenly over the cooled cake to give it a shiny, sweet finish.
Notes
- Ensure the crushed pineapple is well drained to avoid a soggy cake.
- The glaze consistency can be adjusted with more or less pineapple juice depending on your preference.
- For a nutty twist, try stirring chopped pecans into the batter.
- Store the cake in an airtight container at room temperature for up to 3 days or refrigerate for up to 1 week.
