Instructions

- Make the Sweetened Coconut Sauce: While the rice is steaming, combine 1 cup of coconut milk, sugar, and salt in a saucepan over medium heat. Stir continuously until the sugar dissolves completely. Remove from heat once the mixture is warm and well blended.
- Mix Coconut Milk with Rice: When the rice finishes cooking, transfer it to a large bowl. Immediately pour the sweetened coconut milk mixture over the hot sticky rice. Stir gently to combine, then cover the bowl and let it sit for about 20 minutes to allow the rice to absorb the coconut milk and become creamy.
- Prepare the Coconut Topping: Heat the remaining ½ cup of coconut milk until warm, but do not boil. This will be drizzled over the assembled dish to enhance the richness and presentation.
- Assemble and Serve: Scoop portions of the coconut-infused sticky rice onto serving plates. Arrange the sliced ripe mango alongside or on top of the rice. Drizzle with the warm coconut milk topping and sprinkle with toasted sesame seeds if desired for an added nutty flavor and texture.
