Description

Sugar Mixture:

  • 4 cups granulated sugar
  • 1 1/4 cups cornstarch (plus more for dusting)
  • 1 teaspoon cream of tartar
  • 1 tablespoon lemon juice
  • 1 1/2 teaspoons rose water (or to taste)
  • Few drops red or pink food coloring (optional)

For Dusting and Topping:

  • 1/2 cup powdered sugar (for dusting)
  • 1/4 cup chopped pistachios (optional)

Instructions

  1. Prepare the Pan: Grease an 8×8-inch square pan and line with parchment paper. Dust with a mix of powdered sugar and cornstarch.
  2. Make Sugar Syrup: Combine sugar, water, and lemon juice in a saucepan. Cook until mixture reaches 240°F (115°C).
  3. Prepare Cornstarch Mixture: In another pan, cook cornstarch, water, and cream of tartar until thickened.
  4. Combine Mixtures: Slowly pour sugar syrup into cornstarch mixture, stirring constantly. Simmer until thick.
  5. Add Flavorings: Stir in rose water, food coloring, and pistachios. Pour into pan and let set.
  6. Cut and Coat: Once set, cut into squares and coat with sugar-cornstarch mixture.

  • Keep at cool room temperature for up to 2 weeks.
