Sugar Mixture:
- 4 cups granulated sugar
- 1 1/4 cups cornstarch (plus more for dusting)
- 1 teaspoon cream of tartar
- 1 tablespoon lemon juice
- 1 1/2 teaspoons rose water (or to taste)
- Few drops red or pink food coloring (optional)
For Dusting and Topping:
- 1/2 cup powdered sugar (for dusting)
- 1/4 cup chopped pistachios (optional)
Instructions
- Prepare the Pan: Grease an 8×8-inch square pan and line with parchment paper. Dust with a mix of powdered sugar and cornstarch.
- Make Sugar Syrup: Combine sugar, water, and lemon juice in a saucepan. Cook until mixture reaches 240°F (115°C).
- Prepare Cornstarch Mixture: In another pan, cook cornstarch, water, and cream of tartar until thickened.
- Combine Mixtures: Slowly pour sugar syrup into cornstarch mixture, stirring constantly. Simmer until thick.
- Add Flavorings: Stir in rose water, food coloring, and pistachios. Pour into pan and let set.
- Cut and Coat: Once set, cut into squares and coat with sugar-cornstarch mixture.
Notes
- Store in an airtight container with wax paper between layers.
- Keep at cool room temperature for up to 2 weeks.
- Try orange blossom water or lemon extract as alternative flavors.
