Ingredients
Scale
Cupcake Batter
- 1 and 1/4 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
- 1/4 cup espresso or strong brewed coffee, cooled
Coffee Soak
- 1/2 cup espresso or strong brewed coffee
- 2 tablespoons coffee liqueur (optional)
Mascarpone Frosting
- 1 cup mascarpone cheese
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
Garnish
- Cocoa powder, for dusting
- Chocolate curls or grated chocolate, for decorating
Instructions
- Prepare the cupcakes: Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners. In a bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. In a separate large bowl, cream the granulated sugar and softened butter together until light and fluffy. Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract. Mix in sour cream and cooled espresso to combine. Gradually add the dry ingredients and mix just until incorporated to avoid overmixing the batter.
- Bake: Spoon the batter into cupcake liners, filling them about 3/4 full. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Remove from oven and allow cupcakes to cool completely in the tin before removing.
- Make the coffee soak: In a small bowl, combine the remaining espresso or strong brewed coffee with the coffee liqueur, if using. Pierce the top of each completely cooled cupcake several times with a fork to create holes, then brush generously with the coffee soak to infuse the flavors deeply into the cupcakes.
- Prepare the frosting: In a mixing bowl, beat together mascarpone cheese, powdered sugar, and vanilla extract until smooth and creamy. In a separate bowl, whip the heavy cream to stiff peaks using a hand mixer or stand mixer. Gently fold the whipped cream into the mascarpone mixture until fully combined and fluffy.
- Decorate and serve: Using a piping bag or a spatula, spread or pipe the mascarpone frosting generously on top of each coffee-soaked cupcake. Dust each cupcake with cocoa powder and garnish with chocolate curls or grated chocolate for an elegant, tiramisu-inspired finish. Serve immediately or refrigerate until ready to enjoy.
Notes
- You can omit the coffee liqueur for a non-alcoholic version.
- Make sure the coffee used for soaking is completely cooled to avoid melting the frosting.
- For best results, allow cupcakes to chill briefly after decorating to set the frosting.
- Use high-quality mascarpone cheese for authentic tiramisu flavor.
- These cupcakes can be stored in the refrigerator for up to 3 days.
