Ingredients
Scale
Sweet Potato Mixture
- 2 cups mashed sweet potatoes (about 2 medium sweet potatoes)
- 1/2 cup maple syrup
- 1/2 cup packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
Dry Ingredients
- 1 cup all-purpose flour
Optional
- Maple syrup for drizzling
Instructions
- Preheat and Bake Sweet Potatoes: Preheat your oven to 400°F (200°C). Prick the sweet potatoes with a fork and place them on a baking sheet. Bake for 45-60 minutes until they are tender and easily pierced with a fork. Remove from oven, let cool, then peel and mash the sweet potatoes until smooth.
- Mix Wet Ingredients: In a large mixing bowl, combine the mashed sweet potatoes with 1/2 cup maple syrup, brown sugar, and eggs. Add the vanilla extract, ground cinnamon, ground nutmeg, and salt. Whisk the ingredients together until the mixture is smooth and creamy.
- Add Flour: Gradually sift the all-purpose flour into the sweet potato mixture, folding gently to combine. Avoid overmixing to maintain a tender texture.
- Prepare Baking Pan: Grease a 9×9-inch baking pan or line it with parchment paper. Pour the sweet potato batter into the pan and spread it evenly with a spatula.
- Bake Bars: Place the pan in the preheated oven and bake for 25-30 minutes, or until the edges are set and a toothpick inserted into the center comes out clean.
- Cool and Serve: Allow the bars to cool in the pan for 10-15 minutes. Then transfer them to a wire rack to cool completely. Once cooled, cut into squares or rectangles. Optionally, drizzle with additional maple syrup before serving.
