- 1/8 teaspoon ground ginger
- 3/4 cup white chocolate chips (optional)
Instructions
- Preheat the oven: Preheat the oven to 350°F and line two baking sheets with parchment paper.
- Mix wet ingredients: In a large bowl, beat together softened butter, cream cheese, brown sugar, and granulated sugar until light and creamy. Add sweet potato, egg yolk, and vanilla extract, mixing until smooth.
- Combine dry ingredients: In a separate bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger. Gradually stir dry ingredients into wet ingredients until just combined.
- Add chocolate chips and chill: Fold in white chocolate chips if using. Chill the dough in the refrigerator for 30 minutes.
- Bake: Drop tablespoon-sized scoops of dough onto prepared baking sheets. Bake for 10–12 minutes until edges are golden. Cool on the baking sheet before transferring to a wire rack.
