  • 2 tbsp olive oil

  • ½ cup grated Parmesan cheese
  • ½ cup panko breadcrumbs
  • 2 tbsp melted butter
  • Fresh basil for garnish

Instructions

  1. Preheat the Oven: Preheat the oven to 375°F and lightly grease a baking dish.
  2. Prepare the Vegetables: In a large bowl, toss zucchini, yellow squash, tomatoes, red onion, and garlic with olive oil, salt, pepper, and thyme.
  3. Layer and Bake: Layer the vegetables in the baking dish, cover with foil, and bake for 25 minutes. In a bowl, mix Parmesan, panko, and melted butter. Remove foil, top vegetables with the mixture, and bake uncovered for 15–20 minutes until golden.
  4. Garnish and Serve: Garnish with fresh basil before serving.
