Description

A comforting and hearty soup that combines the flavors of stuffing and dumplings in a flavorful broth. Perfect for using up leftover stuffing, this soup is easy to make and great for a cozy meal on a chilly day.

Ingredients

Scale

For the Soup:

  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 2 cups cooked shredded chicken (optional)
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Dumplings:

  • 2 cups leftover stuffing
  • 1/4 cup all-purpose flour
  • 1 egg, beaten
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Saute Vegetables: In a large pot, heat olive oil over medium heat. Add the chopped onion, carrots, and celery, and cook for 5 to 7 minutes until tender. Stir in garlic and cook for 30 seconds.
  2. Prepare Soup: Pour in chicken broth, add shredded chicken, thyme, salt, and pepper. Simmer gently.
  3. Make Dumplings: Mix stuffing, flour, egg, and parsley. Shape into dumplings and drop into simmering soup.
  4. Cook Dumplings: Cover and simmer for 15 minutes until dumplings are cooked through.
  5. Serve: Garnish with parsley and serve hot.

Notes

  • This soup is a great way to use up leftover holiday stuffing.
  • For a vegetarian version, use vegetable broth and skip the chicken.
  • You can also add a splash of cream at the end for a richer broth.
