Sauce:
- 1 cup pineapple chunks (fresh or canned, drained)
- 1/4 cup pineapple juice
- 1/3 cup low-sodium soy sauce
- 2 tablespoons honey
- 2 tablespoons brown sugar
- 2 tablespoons rice vinegar
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 1/2 teaspoon crushed red pepper flakes (optional)
- 1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)
Garnish:
- Green onions and sesame seeds for garnish (optional)
Instructions
- Coat Chicken: Toss chicken pieces with cornstarch until evenly coated.
- Cook Chicken: Brown and cook chicken in oil; set aside.
