Chicken:

  • 1 1/2 pounds boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 1 tablespoon cornstarch
  • 1 tablespoon vegetable oil

Sauce:

  • 1 cup pineapple chunks (fresh or canned, drained)
  • 1/4 cup pineapple juice
  • 1/3 cup low-sodium soy sauce
  • 2 tablespoons honey
  • 2 tablespoons brown sugar
  • 2 tablespoons rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)

Garnish:

  • Green onions and sesame seeds for garnish (optional)

Instructions

  1. Coat Chicken: Toss chicken pieces with cornstarch until evenly coated.
  2. Cook Chicken: Brown and cook chicken in oil; set aside.
  3. Make Sauce: Combine pineapple juice, soy sauce, honey, brown sugar, vinegar, garlic, ginger, and red pepper flakes. Thicken with cornstarch slurry.
  4. Combine: Add chicken and pineapple back to skillet, simmer until sticky.
  5. Serve: Garnish with green onions and sesame seeds. Serve hot.
