Cauliflower Patties:

  • 1 medium head cauliflower, cut into florets

  • 1 large egg
  • 1 garlic clove, minced

  • 2 tablespoons olive oil (for cooking)

Instructions

  1. Steam the Cauliflower: Steam the cauliflower florets until tender, about 8–10 minutes. Let cool slightly, then transfer to a clean kitchen towel and squeeze out as much moisture as possible.
  2. Prepare the Mixture: Transfer the cauliflower to a large bowl and mash or pulse in a food processor until finely crumbled. Add the chopped spinach, mozzarella, Parmesan, breadcrumbs, egg, garlic, onion powder, salt, and pepper. Mix until fully combined.
  3. Form Patties: Scoop about 2 tablespoons of the mixture and form into small patties.
  4. Cook the Patties: Heat olive oil in a non-stick skillet over medium heat. Cook the patties for 3–4 minutes per side until golden and crispy.
