Cauliflower Patties:
- 1 medium head cauliflower, cut into florets
- 1 cup fresh spinach, finely chopped

- 1 large egg
- 1 garlic clove, minced
- 1/4 teaspoon onion powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil (for cooking)
Instructions
- Steam the Cauliflower: Steam the cauliflower florets until tender, about 8–10 minutes. Let cool slightly, then transfer to a clean kitchen towel and squeeze out as much moisture as possible.
- Prepare the Mixture: Transfer the cauliflower to a large bowl and mash or pulse in a food processor until finely crumbled. Add the chopped spinach, mozzarella, Parmesan, breadcrumbs, egg, garlic, onion powder, salt, and pepper. Mix until fully combined.
- Form Patties: Scoop about 2 tablespoons of the mixture and form into small patties.
- Cook the Patties: Heat olive oil in a non-stick skillet over medium heat. Cook the patties for 3–4 minutes per side until golden and crispy.
- Serve: Serve warm as a snack, side dish, or light meal.
Notes
- You can bake the patties at 400°F (200°C) for 20 minutes, flipping halfway, for a lower-oil option.
- Add red pepper flakes for a bit of heat, or swap in feta for a tangier flavor.
