Shrimp and Vegetables
- 1 pound large shrimp, peeled and deveined
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup broccoli florets
- 1 medium carrot, thinly sliced
- 3 cloves garlic, minced
- 1 teaspoon ginger, minced
Sauce
- 3 tablespoons soy sauce
- 1 tablespoon sriracha or other hot sauce
- 1 tablespoon rice vinegar
- 1 teaspoon honey
- 1/4 teaspoon crushed red pepper flakes (optional)
For Cooking and Garnish
- 2 tablespoons vegetable or sesame oil
- 2 green onions, sliced for garnish
- 1 teaspoon sesame seeds (optional)
Instructions
- Prepare the Sauce: In a small bowl, whisk together soy sauce, sriracha, rice vinegar, honey, and crushed red pepper flakes if using. Set this spicy sauce mixture aside.
- Cook the Shrimp: Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the peeled and deveined shrimp and cook for 2 to 3 minutes per side until they turn pink and are cooked through. Remove the shrimp from the skillet and set aside.
- Sauté Aromatics: Add the remaining 1 tablespoon of oil to the skillet and sauté the minced garlic and ginger for about 30 seconds until fragrant, stirring continuously to prevent burning.
- Cook the Vegetables: Add the sliced red bell pepper, yellow bell pepper, broccoli florets, and thinly sliced carrot to the skillet. Stir-fry the vegetables for 4 to 5 minutes until they become tender-crisp, keeping the vegetables vibrant and slightly crunchy.
- Combine Shrimp and Sauce: Return the cooked shrimp to the skillet with the vegetables. Pour the prepared sauce over the shrimp and vegetables, tossing everything together for 1 to 2 minutes until evenly coated and heated through.
- Garnish and Serve: Remove the skillet from heat. Garnish the stir-fry with sliced green onions and sprinkle with sesame seeds if desired. Serve hot over steamed rice, cauliflower rice, or noodles for a complete meal.
