Description

A vibrant and refreshing Spicy Pineapple Slaw that combines crisp cabbage, sweet pineapple, and a zesty lime-honey dressing with a kick of jalapeño and Fresno chile. Perfect as a side dish to complement grilled meats or enjoy on its own as a light, flavorful salad.

Ingredients

Scale

Vegetables & Fruits

  • 2 cups shredded green cabbage
  • 2 cups shredded red cabbage
  • 1 cup diced fresh pineapple
  • 5 radishes, thinly sliced
  • 1/4 cup fresh cilantro leaves
  • 1 jalapeño pepper, finely chopped (seeds removed for less heat)
  • 1 red Fresno chile, finely chopped
  • Zest and juice of 1 lime

Dressing & Seasonings

  • 1 tablespoon honey
  • Table salt, to taste
  • Black pepper, to taste
  • 2 tablespoons extra-virgin olive oil

Instructions

  1. Combine Ingredients: In a large bowl, mix together the shredded green cabbage, shredded red cabbage, diced pineapple, thinly sliced radishes, fresh cilantro leaves, finely chopped jalapeño, and Fresno chile to form the base of the slaw.
  2. Make Dressing: In a smaller bowl, whisk together the lime zest, lime juice, honey, salt, pepper, and extra-virgin olive oil until the dressing is smooth and well combined.
  3. Toss Slaw with Dressing: Pour the prepared dressing over the vegetable and fruit mixture. Toss thoroughly to ensure every ingredient is evenly coated with the zesty dressing.
  4. Adjust Seasonings: Taste the slaw and add more salt, pepper, or honey if necessary to balance the flavors to your preference.
  5. Chill: Refrigerate the slaw for at least 15 minutes before serving. This resting time allows the flavors to meld together beautifully.

Notes

  • For a milder slaw, remove the seeds from the jalapeño and Fresno chile completely.
  • Can be prepared a few hours in advance and stored in the fridge for better flavor integration.
  • Great accompaniment for grilled chicken, fish tacos, or as a refreshing side to spicy meals.
  • To keep the slaw crunchy, dress it just before serving if not refrigerating.
