- 1/2 cup crumbled cotija or feta cheese
- 1/2 cup shredded pepper jack cheese
- 2 large eggs
- 1/4 cup sour cream
- 1/2 cup all-purpose flour
- 1/2 teaspoon baking powder
- Pinch of cayenne pepper (optional)
- Cooking spray or oil for muffin tin
Instructions
- Preheat oven: Preheat oven to 375°F (190°C) and grease a mini muffin tin.
- Sauté corn: In a skillet, melt butter and sauté corn with spices until golden. Let cool.
- Prepare batter: Whisk eggs, sour cream, flour, and baking powder. Add sautéed corn, cheeses, and herbs.
- Bake: Spoon mixture into muffin cups and bake for 15–18 minutes until golden.
- Serve: Let cool slightly before serving with sour cream, lime wedges, or hot sauce.
