  • 1/4 teaspoon cayenne pepper, optional
  • 1 pound carrots, peeled and sliced
  • 1 cup red lentils, rinsed
  • 5 cups vegetable broth
  • 1 can (14 ounces) diced tomatoes
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • Juice of 1 lemon
  • 2 tablespoons chopped fresh cilantro, for garnish

Instructions

  1. Heat the olive oil: In a large pot over medium heat, add the onion and cook until softened.
  2. Add spices: Stir in garlic, ginger, cumin, coriander, turmeric, and cayenne; cook until fragrant.
  3. Cook soup: Add carrots, lentils, broth, tomatoes, salt, and pepper. Simmer for 25-30 minutes until tender.
  4. Puree: Blend soup until smooth. Stir in lemon juice.
  5. Serve: Garnish with cilantro.
