- 1/4 teaspoon cayenne pepper, optional
- 1 pound carrots, peeled and sliced
- 1 cup red lentils, rinsed
- 5 cups vegetable broth
- 1 can (14 ounces) diced tomatoes
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- Juice of 1 lemon
- 2 tablespoons chopped fresh cilantro, for garnish
Instructions
- Heat the olive oil: In a large pot over medium heat, add the onion and cook until softened.
- Add spices: Stir in garlic, ginger, cumin, coriander, turmeric, and cayenne; cook until fragrant.
- Cook soup: Add carrots, lentils, broth, tomatoes, salt, and pepper. Simmer for 25-30 minutes until tender.
- Puree: Blend soup until smooth. Stir in lemon juice.
- Serve: Garnish with cilantro.
