  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 cup frozen corn
  • 1 (10-ounce) can diced tomatoes with green chilies (like Rotel)
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 2 cups shredded cheddar cheese
  • 1 (20-ounce) bag sweet potato tater tots (frozen)

Optional Toppings:

  • Chopped cilantro
  • Green onions
  • Sour cream
  • Avocado

Instructions

  1. Preheat oven: Preheat oven to 400°F (200°C).
  2. Sauté vegetables: In a large skillet over medium heat, heat olive oil. Add onion and red bell pepper, cook until soft. Stir in garlic.
  3. Add ingredients: Add black beans, corn, diced tomatoes, chili powder, cumin, smoked paprika, salt, and pepper. Simmer until slightly thickened.
  4. Assemble: Transfer mixture to a greased 9×13-inch baking dish. Sprinkle with cheese. Arrange tater tots on top.
  5. Bake: Bake uncovered for 25–30 minutes until tots are crispy.
  6. Serve: Top with optional cilantro, green onions, avocado, or sour cream.
