- 1 tablespoon olive oil
- 1 small onion, diced
- 1 red bell pepper, diced
- 2 cloves garlic, minced
- 1 (15-ounce) can black beans, drained and rinsed
- 1 cup frozen corn
- 1 (10-ounce) can diced tomatoes with green chilies (like Rotel)
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- Salt and pepper, to taste
- 2 cups shredded cheddar cheese
- 1 (20-ounce) bag sweet potato tater tots (frozen)
Optional Toppings:
- Chopped cilantro
- Green onions
- Sour cream
- Avocado
Instructions
- Preheat oven: Preheat oven to 400°F (200°C).
- Sauté vegetables: In a large skillet over medium heat, heat olive oil. Add onion and red bell pepper, cook until soft. Stir in garlic.
- Add ingredients: Add black beans, corn, diced tomatoes, chili powder, cumin, smoked paprika, salt, and pepper. Simmer until slightly thickened.
- Assemble: Transfer mixture to a greased 9×13-inch baking dish. Sprinkle with cheese. Arrange tater tots on top.
- Bake: Bake uncovered for 25–30 minutes until tots are crispy.
- Serve: Top with optional cilantro, green onions, avocado, or sour cream.
Notes
- For a spicier version, add chopped jalapeños or extra chili flakes.
- To make it meaty, stir in cooked ground turkey or chorizo with the beans.
