Instructions
- Prepare Aromatics: In a large pot or Dutch oven, heat olive oil over medium heat. Add the chopped onion and green bell pepper, sautéing for 4–5 minutes or until they become soft and fragrant.
- Add Garlic: Stir in the minced garlic and cook for about 30 seconds until fragrant, being careful not to burn it.
- Cook Ground Beef: Add the ground beef to the pot, breaking it apart as it cooks. Stir and cook until browned and fully cooked through. Drain excess fat as needed to keep the chili from becoming greasy.
- Incorporate Tomato Paste: Stir in the tomato paste and cook for 1–2 minutes to deepen its flavor and blend it into the beef mixture.
- Add Tomatoes and Beans: Mix in crushed tomatoes, diced tomatoes, kidney beans, and pinto beans. Stir well to combine all ingredients uniformly.
- Season the Chili: Add chili powder, smoked paprika, ground cumin, dried oregano, salt, black pepper, cayenne pepper (if using), and Worcestershire sauce. Pour in the beef broth or water, then stir everything together thoroughly.
- Simmer: Bring the chili to a gentle simmer. Reduce heat to low, cover the pot, and allow it to simmer for at least 30 minutes, stirring occasionally. For a richer flavor, simmer uncovered for up to 1 hour, stirring periodically to prevent sticking.
