Description

  • 1 ½ pounds sirloin or chuck steak (cut into large chunks)

Potatoes:

  • 1 pound baby potatoes (halved)

Corn:

  • 2 cups corn kernels (fresh, frozen, or canned and drained)

  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup beef broth
  • 2 tablespoons butter (optional)
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Sear the Steak: In a large skillet, sear the steak pieces until browned.
  2. Prepare Slow Cooker: Place seared steak, potatoes, corn, onion, and garlic in the slow cooker.
  3. Mix Seasonings: Whisk together beef broth, Worcestershire sauce, smoked paprika, thyme, salt, and pepper. Pour over ingredients in the slow cooker.
  4. Cook: Cover and cook on low for 6-8 hours or high for 3-4 hours until steak is tender and potatoes are cooked.
  5. Finish and Serve: Stir in butter if desired. Garnish with parsley before serving.
