- 1 cup fresh basil, chopped
Liquids
- 1 cup heavy cream
- 1/2 cup chicken broth
Seasonings

Instructions
- Place chicken breasts in the slow cooker. Arrange the 4 chicken breasts evenly at the bottom of your slow cooker to ensure even cooking.
- Add diced tomatoes, chicken broth, onion, and garlic. Pour the canned diced tomatoes (with juice), chicken broth, diced onion, and minced garlic over the chicken for a flavorful base.
- Season with salt and pepper. Sprinkle salt and freshly ground black pepper to taste, adjusting to your preference.
- Cover and cook on low for 6 hours. Secure the lid on the slow cooker and cook on the low setting for 6 hours until the chicken is tender and cooked through.
- Stir in heavy cream and chopped basil. After 6 hours, add the heavy cream and fresh chopped basil to the slow cooker, stirring gently to combine all flavors.
- Cook for an additional 30 minutes. Continue cooking on low for another 30 minutes to allow the cream to blend fully and basil to infuse the sauce.
- Serve warm over pasta or rice. Spoon the creamy tomato basil chicken over cooked pasta or rice and enjoy a hearty and delicious meal.
Notes
- For a lighter version, substitute heavy cream with half-and-half or a dairy-free cream alternative.
- You can add red pepper flakes for a little spice.
- Fresh basil can be replaced with dried basil, but reduce quantity to about 1 tablespoon.
- Leftovers store well in the refrigerator for up to 3 days.
- Use bone-in chicken breasts for juicier results, but increase cooking time by 1-2 hours.
