Description

This Slow Cooker Creamy Tomato Basil Chicken is a comforting and flavorful dish perfect for a cozy meal. Tender chicken breasts slow-cooked in a rich tomato and basil sauce, finished with creamy heavy cream for an indulgent touch. Serve it over pasta or rice for a satisfying dinner that requires minimal effort.

Ingredients

Scale

Chicken

  • 4 chicken breasts

Vegetables & Herbs

  • 1 can (14 oz) diced tomatoes
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 cup fresh basil, chopped

Liquids

  • 1 cup heavy cream
  • 1/2 cup chicken broth

Seasonings

  • Salt to taste
  • Pepper to taste

Instructions

  1. Place chicken breasts in the slow cooker. Arrange the 4 chicken breasts evenly at the bottom of your slow cooker to ensure even cooking.
  2. Add diced tomatoes, chicken broth, onion, and garlic. Pour the canned diced tomatoes (with juice), chicken broth, diced onion, and minced garlic over the chicken for a flavorful base.
  3. Season with salt and pepper. Sprinkle salt and freshly ground black pepper to taste, adjusting to your preference.
  4. Cover and cook on low for 6 hours. Secure the lid on the slow cooker and cook on the low setting for 6 hours until the chicken is tender and cooked through.
  5. Stir in heavy cream and chopped basil. After 6 hours, add the heavy cream and fresh chopped basil to the slow cooker, stirring gently to combine all flavors.
  6. Cook for an additional 30 minutes. Continue cooking on low for another 30 minutes to allow the cream to blend fully and basil to infuse the sauce.
  7. Serve warm over pasta or rice. Spoon the creamy tomato basil chicken over cooked pasta or rice and enjoy a hearty and delicious meal.

Notes

  • For a lighter version, substitute heavy cream with half-and-half or a dairy-free cream alternative.
  • You can add red pepper flakes for a little spice.
  • Fresh basil can be replaced with dried basil, but reduce quantity to about 1 tablespoon.
  • Leftovers store well in the refrigerator for up to 3 days.
  • Use bone-in chicken breasts for juicier results, but increase cooking time by 1-2 hours.
