Description

Slow Cooker Chicken Philly Sandwiches combine tender, juicy shredded chicken with sautéed bell peppers and onions, seasoned with garlic, paprika, and Italian herbs. This hearty and flavorful dish is slow-cooked to perfection, ensuring the chicken is moist and infused with savory flavors. Layered on toasted hoagie rolls and topped with melty provolone cheese, these sandwiches make a perfect easy-to-prepare meal for gatherings or family dinners.

Ingredients

Scale

Chicken and Vegetables

  • 2 lbs boneless, skinless chicken breasts
  • 2 green bell peppers, sliced
  • 1 large onion, sliced

Seasonings

  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • 1 tsp dried Italian seasoning
  • Salt and pepper to taste

Other Ingredients

  • 1 cup low-sodium chicken broth
  • 6 hoagie rolls
  • 6 slices provolone cheese

Instructions

  1. Prepare the Slow Cooker: Make sure your slow cooker is clean and ready. Place the boneless, skinless chicken breasts at the bottom of the slow cooker evenly.
  2. Add Vegetables and Seasonings: Layer the sliced green bell peppers and onions over the chicken. Sprinkle garlic powder, onion powder, smoked paprika, Italian seasoning, salt, and pepper evenly on top to season the ingredients well.
  3. Pour in Broth: Pour 1 cup of low-sodium chicken broth into the slow cooker to keep the chicken moist and help cook all the ingredients together with flavor.
  4. Slow Cook: Cover the slow cooker and cook on the low setting for 6-7 hours, or on high for 3-4 hours, until the chicken is very tender and can be shredded easily with a fork.
  5. Shred the Chicken: Remove the cooked chicken breasts and shred them using two forks directly in the slow cooker, mixing well with the softened peppers and onions for even distribution.
  6. Toast the Hoagie Rolls (Optional): For added texture and warmth, lightly toast the hoagie rolls either in a toaster oven or on a skillet before assembling the sandwiches.
  7. Assemble the Sandwiches: Spoon the warm shredded chicken mixture onto each hoagie roll. Top each sandwich with a slice of provolone cheese to melt slightly from the heat of the filling. Serve immediately and enjoy.

Notes

  • You can substitute provolone cheese with mozzarella or cheddar if preferred.
  • For extra heat, consider adding a pinch of crushed red pepper flakes to the seasoning mix.
  • If you don’t have a slow cooker, this recipe can be adapted for the oven by baking covered at 325°F for 2-3 hours until the chicken is tender.
  • To prep ahead, cook the chicken mixture fully and refrigerate; then assemble sandwiches just before serving.
  • Leftover chicken mixture can be stored in an airtight container for up to 3 days in the refrigerator.
