Instructions

  1. Sear the beef: Heat 1 tablespoon butter and the olive oil in a large skillet over medium-high heat. Season the thinly sliced beef with salt and black pepper, then add to the skillet and sear for 2-3 minutes until nicely browned. Remove the beef from the skillet and set aside.
  2. Sauté the onions: In the same skillet, melt the remaining tablespoon of butter. Add the finely chopped onion and sauté for about 2 minutes until softened and translucent.
  3. Cook garlic and mushrooms: Stir in the minced garlic and sliced mushrooms. Cook, stirring occasionally, until the mushrooms are tender and browned, approximately 5 minutes.
  4. Add liquids and spices: Pour in the beef broth, Worcestershire sauce, Dijon mustard, and sprinkle in the paprika. Stir everything together to combine the flavors.
  5. Simmer with beef: Return the seared beef to the skillet. Reduce the heat slightly and let the mixture simmer gently for 5 minutes to meld the flavors.
  6. Finish the sauce: Lower the heat further and stir in the sour cream carefully to avoid curdling. If a thicker sauce is desired, mix the cornstarch with 2 tablespoons of water to make a slurry and stir it in. Simmer for an additional 2 minutes until the sauce thickens slightly.
