Instructions
- Cook Shrimp: Heat 1 tablespoon olive oil in a large skillet. Cook shrimp with salt and pepper until pink and opaque. Set aside.
- Sauté Aromatics: In the same skillet, add remaining olive oil, onion, and garlic. Cook until fragrant.
- Add Orzo and Broth: Stir in orzo and toast lightly. Add broth, diced tomatoes, oregano, and red pepper flakes. Simmer until orzo is tender.
