Description

This Shrimp and Chicken Scampi recipe is a delightful seafood and poultry dish cooked in a garlic butter sauce with hints of lemon and fresh parsley. Prepared on the stovetop, it combines tender chicken and succulent shrimp tossed with linguine, Parmesan cheese, and a zesty broth-based sauce for a comforting, flavorful Italian-American main course perfect for family dinners or special occasions.

Ingredients

Scale

Protein

  • 2 boneless skinless chicken breasts, cut into bite-sized pieces
  • 1 pound large shrimp, peeled and deveined

Liquids & Sauces

  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1/2 cup chicken broth
  • 1/2 cup dry white wine or additional chicken broth
  • 1 tablespoon fresh lemon juice

Produce & Herbs

  • 4 cloves garlic, minced
  • 1 teaspoon lemon zest
  • 1/4 cup chopped fresh parsley

Dry Ingredients & Seasonings

  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup grated Parmesan cheese
  • 8 ounces linguine or spaghetti, cooked

Instructions

  1. Cook the Chicken: Heat olive oil and 1 tablespoon of butter in a large skillet over medium heat. Add the chicken pieces, season with half of the salt and pepper, and cook until golden brown and fully cooked, about 5 to 6 minutes. Remove the chicken from the skillet and set aside.
  2. Cook the Shrimp: In the same skillet, add the remaining tablespoon of butter and the shrimp. Season with the remaining salt and pepper. Cook the shrimp for 2 to 3 minutes until they turn pink and are just cooked through. Remove the shrimp and set aside with the chicken.
  3. Sauté Garlic and Red Pepper Flakes: Add the minced garlic and red pepper flakes to the skillet. Cook for about 1 minute, stirring frequently, until the garlic is fragrant and lightly golden.
  4. Deglaze and Simmer Sauce: Pour in the chicken broth and dry white wine, scraping up any browned bits from the bottom of the skillet. Let the mixture simmer gently for 3 to 4 minutes to reduce slightly and develop flavor.
  5. Add Lemon and Combine Proteins: Stir in the fresh lemon juice and lemon zest. Return the cooked chicken and shrimp to the skillet. Toss them in the sauce to coat evenly and heat through.
  6. Toss with Pasta and Serve: Add the cooked linguine or spaghetti to the skillet. Toss everything together until the pasta is well coated with the sauce and heated through. Sprinkle with chopped fresh parsley and grated Parmesan cheese before serving.

Notes

  • Do not overcook the shrimp to keep them tender and juicy.
  • You can substitute the white wine with additional chicken broth if preferred for a non-alcoholic version.
  • Serve with crusty bread to soak up the flavorful garlic butter sauce.
  • Freshly grated Parmesan adds the best flavor; avoid pre-grated for best texture.
  • Adjust red pepper flakes according to your spice preference.
