Beef Brisket:

  • 34 lb beef brisket, trimmed of excess fat
  • 2 tbsp olive oil

Seasoning:

  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • ½ cup tomato paste
  • ¼ cup Worcestershire sauce
  • 2 tbsp soy sauce
  • 2 tbsp brown sugar
  • 2 tsp smoked paprika
  • 1 tsp ground black pepper
  • 1 tsp salt
  • 1 tsp dried thyme
  • ½ tsp cayenne pepper (optional)
  • 2 tbsp apple cider vinegar
  • 2 tbsp cornstarch (optional, for thickening sauce)

Instructions

  1. Season and Sear: Pat brisket dry and season with salt, pepper, smoked paprika, and thyme. Sear brisket on all sides until well browned.
  2. Prepare Ingredients: Sauté onions and garlic, then add tomato paste, Worcestershire sauce, soy sauce, brown sugar, cayenne, and apple cider vinegar.
  3. Cook in Crock Pot: Place brisket in the crock pot, pour the onion mixture over it, and cook on low for 8–10 hours or high for 4–5 hours.
  4. Rest and Serve: Let brisket rest before slicing. Optionally, thicken the sauce with a cornstarch slurry.
