Description

A classic British appetizer featuring seasoned ground pork sausage wrapped in flaky puff pastry, baked to golden perfection. These sausage rolls are perfect for parties, snacks, or a comforting treat and can be made ahead for convenience.

Ingredients

Scale

Sausage Filling

  • 1 pound ground pork sausage (mild or spicy)
  • 1/4 cup breadcrumbs
  • 1 egg
  • 1 teaspoon dried thyme
  • 1 teaspoon dried sage
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Pastry and Finish

  • 1 sheet frozen puff pastry, thawed
  • 1 egg (for egg wash)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and for easy cleanup.
  2. Prepare Sausage Mixture: In a large bowl, combine the ground pork sausage with breadcrumbs, 1 egg, dried thyme, dried sage, garlic powder, onion powder, salt, and black pepper. Mix thoroughly until all ingredients are evenly incorporated.
  3. Shape Pastry: On a lightly floured surface, roll out the thawed puff pastry sheet into a 10×12-inch rectangle. Cut this rectangle in half lengthwise to create two long strips of pastry.
  4. Form Sausage Logs: Divide the sausage mixture in half. Shape each half into a long log and place it down the center of each pastry strip.
  5. Seal Rolls: Fold the pastry over the sausage logs, pressing the edges together firmly to seal. Turn the rolls seam-side down and cut each into 6 equal pieces, yielding 12 rolls in total.
  6. Egg Wash: Beat the remaining egg and brush it over the tops of the sausage rolls to create a beautiful golden finish during baking.
  7. Bake: Arrange the rolls on the prepared baking sheet, leaving space between them. Bake for 20 to 25 minutes, or until the pastry is golden brown and the sausage is cooked through.
  8. Cool and Serve: Allow the sausage rolls to cool for a few minutes before serving. They pair wonderfully with mustard, ketchup, or tangy chutney.

Notes

  • These sausage rolls can be made ahead and frozen unbaked; when ready to cook, bake straight from frozen, adding 5–7 extra minutes to the bake time.
  • Serve with your favorite condiments such as mustard, ketchup, or chutney for added flavor.
  • For a gluten-free version, use gluten-free puff pastry and gluten-free breadcrumbs.
  • Adjust spice levels by choosing mild or spicy sausage according to preference.
