For the balls:
- 1 cup pitted Medjool dates
- 1 cup unsweetened shredded coconut (divided)
- ½ cup vanilla protein powder
- 2 tablespoons cocoa powder
- 2 tablespoons almond butter
- 1 tablespoon honey or maple syrup
- 1 teaspoon vanilla extract
- 2–3 tablespoons water (as needed)
For coating:
- ¼ cup dark chocolate chips (melted)
Instructions
- Prepare the mixture: In a food processor, pulse dates until finely chopped and sticky.
- Add ingredients: Add ½ cup shredded coconut, protein powder, cocoa powder, almond butter, honey or maple syrup, and vanilla extract. Process until mixture comes together, adding water 1 tablespoon at a time if too dry.
- Form the balls: Roll mixture into 1-inch balls and place on a parchment-lined tray.
- Coat the balls: Roll each ball in the remaining shredded coconut to coat.
- Chocolate drizzle: Drizzle melted dark chocolate over the top or dip bottoms in chocolate if preferred.
- Chill and serve: Refrigerate for at least 30 minutes to set before serving.
Notes
- For extra caramel flavor, use caramel-flavored protein powder or add a drop of caramel extract.
- Store in an airtight container in the refrigerator for up to 1 week, or freeze for longer storage.
