  • 1 cup pitted Medjool dates
  • 1 cup unsweetened shredded coconut (divided)
  • ½ cup vanilla protein powder
  • 2 tablespoons cocoa powder
  • 2 tablespoons almond butter
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon vanilla extract
  • 23 tablespoons water (as needed)

For coating:

  • ¼ cup dark chocolate chips (melted)

Instructions

  1. Prepare the mixture: In a food processor, pulse dates until finely chopped and sticky.
  2. Add ingredients: Add ½ cup shredded coconut, protein powder, cocoa powder, almond butter, honey or maple syrup, and vanilla extract. Process until mixture comes together, adding water 1 tablespoon at a time if too dry.
  3. Form the balls: Roll mixture into 1-inch balls and place on a parchment-lined tray.
  4. Coat the balls: Roll each ball in the remaining shredded coconut to coat.
  5. Chocolate drizzle: Drizzle melted dark chocolate over the top or dip bottoms in chocolate if preferred.
  6. Chill and serve: Refrigerate for at least 30 minutes to set before serving.
