Delicious and nutritious Samoa Cookie Protein Balls inspired by the classic Samoa cookie flavors. These no-bake protein-packed snacks combine oats, peanut butter, shredded coconut, and chocolate for a perfect energy boost and sweet treat. Wet Ingredients

  • 1/2 cup creamy peanut butter
  • 1/3 cup honey or maple syrup

Add-ins and Toppings

  • 1/2 cup dark chocolate chips
  • Additional shredded coconut for topping

Instructions

  1. Combine Base Ingredients: In a large mixing bowl, mix the oats, protein powder, peanut butter, honey (or maple syrup), and shredded coconut until the mixture becomes sticky and holds together well.
  2. Fold in Chocolate and Salt: Gently fold the dark chocolate chips and a pinch of sea salt into the mixture until they are evenly distributed throughout.
  3. Form Balls: Using about 1 tablespoon of the mixture per ball, scoop and roll into bite-sized balls with your hands.
  4. Chill the Balls: Place the formed balls onto a parchment-lined tray and refrigerate for 30 minutes to firm up.
  5. Melt Chocolate Coating: While the balls chill, melt the dark chocolate either in the microwave or using a double boiler until smooth and pourable.
  6. Dip and Decorate: Dip each chilled ball halfway into the melted chocolate and place them back on the parchment paper. While the chocolate is still warm, sprinkle additional shredded coconut on top for garnish.
  7. Set and Cool: Allow the chocolate coating to cool and harden completely at room temperature or in the fridge before serving.
