Salami Roll-Ups:
- 12 slices Genoa salami
- 4 ounces cream cheese (softened)
- 2 tablespoons finely chopped fresh chives
- 2 tablespoons finely chopped roasted red peppers (patted dry)
- 12 small dill pickle spears or strips
Instructions
- In a small bowl, mix the softened cream cheese with chopped chives and roasted red peppers until well combined. Lay salami slices flat on a clean surface.
- Spread about 1 teaspoon of the cream cheese mixture evenly over each slice. Place a small dill pickle spear at one end of the salami slice and roll up tightly.
- Arrange roll-ups seam side down on a plate or platter. Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld.
- Serve chilled.
Notes
- For a spicier twist, add a dash of hot sauce to the cream cheese mixture or use pepper jack cheese instead.
- These can also be made with turkey or ham slices for variation.
