Ingredients
Scale
Strawberries & Toppings
- 1 pound strawberries, ends removed
- 2 tablespoons honey
- Juice of 1/2 lemon
- 4 sprigs fresh thyme, plus extra for garnish
Bread & Ricotta
- 2 slices rustic bread, 1-inch thickness
- 1 tablespoon olive oil
- 3/4 cup whole milk ricotta cheese
- Pinch of sea salt
Instructions
- Roast the Strawberries: Preheat your oven to 400°F (200°C). Place the strawberries in a medium baking dish, drizzle with honey, squeeze the lemon juice over them, and scatter the thyme sprigs on top. Roast for 20 minutes, stirring halfway through, until the strawberries are soft and syrupy. Remove from oven and set aside to cool.
- Toast the Bread: Lightly drizzle olive oil over both sides of the rustic bread slices. Place them on a baking sheet and toast in the oven for about 1 minute or until they become lightly golden and crisp. Keep an eye to avoid burning.
- Whip the Ricotta: Transfer the ricotta cheese to a food processor and pulse for 30 seconds to 1 minute, scraping down the sides as needed, until the ricotta becomes light, fluffy, and smooth in texture.
- Assemble the Toast: Spread the whipped ricotta evenly over each toasted bread slice. Spoon the roasted strawberries along with their syrupy juices on top. Garnish with additional thyme leaves and a pinch of sea salt. Serve immediately to enjoy the contrasting flavors and textures.
Notes
- Use ripe but firm strawberries to avoid overly mushy texture when roasting.
- Adjust honey amount according to the sweetness of the strawberries and personal preference.
- For a dairy-free version, substitute ricotta with a plant-based alternative.
- If you do not have a food processor, whip ricotta with a hand mixer or vigorously with a whisk.
- To elevate the toast, consider adding a drizzle of aged balsamic vinegar before serving.
