Potatoes and Seasonings
- 2 pounds baby potatoes, halved
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon smoked paprika
Feta and Garlic
- 8 ounces feta cheese block
- 4 garlic cloves, peeled and lightly smashed
- 1 teaspoon dried oregano
- 1/4 teaspoon red pepper flakes (optional)
Garnish and Serving
- 2 tablespoons fresh parsley, chopped
- Lemon wedges for serving
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the potatoes and baking the feta.
- Prepare Potatoes: In a large bowl, toss the halved baby potatoes with olive oil, salt, black pepper, and smoked paprika until evenly coated. Spread them out in a single layer on a baking sheet.
- Initial Roasting: Roast the potatoes in the preheated oven for 20 minutes, allowing them to start becoming tender and golden.
- Add Feta and Garlic: Remove the baking sheet from the oven. Push the roasted potatoes to the sides, creating space in the center. Place the feta cheese block and the smashed garlic cloves in the center of the baking sheet. Sprinkle dried oregano and, if using, red pepper flakes over the feta.
- Bake Together: Return the baking sheet to the oven and bake for an additional 15–20 minutes, until the potatoes are golden and crisp, and the feta is soft and slightly browned.
- Mash Feta and Garlic: Remove the baking sheet from the oven. Using a fork, mash the softened feta and garlic together to create a creamy mixture.
- Combine and Garnish: Toss the roasted potatoes in the creamy baked feta and garlic mixture until well coated. Sprinkle with fresh chopped parsley.
- Serve: Serve warm with lemon wedges on the side to squeeze over the dish for added brightness.
Notes
- Add cherry tomatoes or kalamata olives alongside the feta before baking for extra Mediterranean flavor.
- This dish is best served warm to enjoy the creamy texture of the feta.
