  • 1½ teaspoons salt

Instructions

  1. Roast the Garlic: Preheat your oven to 400°F. Slice the top off the head of garlic to expose the cloves inside. Drizzle the garlic with olive oil, then wrap it tightly in foil. Roast in the oven for about 40 minutes until the cloves are soft and golden brown.
  2. Cook the Potatoes: While the garlic roasts, place the cut potatoes in a large pot and cover them with cold water. Bring the water to a boil and cook the potatoes until they are fork-tender, which should take about 15 to 20 minutes. Drain the potatoes thoroughly and return them to the pot.
  3. Prepare the Garlic Paste: Once the roasted garlic is cool enough to handle, squeeze the softened cloves out of their skins and mash them into a smooth paste.
  4. Mash the Potatoes: Add the roasted garlic paste, butter, sour cream, and warmed milk to the potatoes. Mash everything together until the mixture is smooth and creamy. If the potatoes seem too thick, add a bit more warm milk to reach your desired consistency.
  5. Season and Serve: Taste the mashed potatoes and season with salt and black pepper as needed. Transfer the mashed potatoes to a serving dish and garnish with chopped fresh chives if desired. Serve warm.
