Description

A light and refreshing Strawberry Cucumber Salad perfect for summer gatherings, combining crisp lettuce, sweet strawberries, and tangy feta with a vibrant homemade dressing.

Ingredients

Scale

Salad Ingredients

  • 1 head Lettuce (Mixed greens can add more flavors)
  • 1 medium Cucumber (Consider zucchini for a unique twist)
  • 1 cup Strawberries (Always choose seasonal or homegrown)
  • 1 cup Feta Cheese (Try goat cheese or blue cheese for different notes)
  • 1/4 medium Red Onion (Scallions can be used for a milder flavor)
  • 1/4 cup Fresh Basil (Mint is a lovely alternative)

Dressing Ingredients

  • 1/2 teaspoon Kosher Salt (You can swap with regular salt but reduce amount)
  • 1 tablespoon Dijon Mustard (Feel free to omit for a milder dressing)
  • 1 tablespoon Honey (Replace with maple syrup for a vegan option)
  • 2 tablespoons Red Wine Vinegar or Lemon Juice (White wine vinegar works well too)
  • 3 tablespoons Olive Oil (Avocado oil is another healthy substitute)

Instructions

  1. Prepare the Vegetables and Fruit: Thinly slice the cucumber and red onion. Halve or quarter the strawberries depending on their size to ensure easy eating and balanced flavor in each bite.
  2. Make the Dressing: In a jar or small bowl, combine the Dijon mustard, honey, red wine vinegar (or lemon juice), olive oil, and kosher salt. Shake or whisk vigorously until the dressing is smooth and emulsified.
  3. Assemble the Salad: On a large serving platter, spread the lettuce as the base layer. Then layer evenly the sliced cucumbers, strawberries, and red onion on top. Sprinkle the fresh basil leaves and crumbled feta cheese over the salad.
  4. Add Dressing and Serve: Just before serving, drizzle the prepared dressing evenly over the salad. Toss gently if desired to combine all flavors, or serve as is for a colorful presentation.

Notes

  • For a vegan version, substitute honey with maple syrup and use vegan cheese instead of feta.
  • Mixed greens can be used in place of plain lettuce for added flavor and texture.
  • Try substituting zucchini for cucumber for a mild variation.
  • Scallions can be used instead of red onion for a gentler onion taste.
  • Use fresh seasonal strawberries for the best flavor and sweetness.
  • Dressing can be made ahead and stored in the fridge for up to 2 days.
  • Keep salad components chilled before serving for extra crispness.
