Ingredients
Scale
Blondies
- 1 box (18 ounces) Rainbow Chip Cake Mix (OR Funfetti Cake Mix)
- 1/4 cup vegetable oil
- 1 large egg
- 1/3 cup milk
- 1/2 cup white chocolate chips
Frosting
- 4 tablespoons salted butter
- 2 tablespoons milk
- 2 cups powdered sugar
- 1/2 teaspoon vanilla extract
- Food coloring (optional, 1-2 drops)
- Sprinkles (for decoration)
Instructions
- Preheat and prepare pan: Preheat your oven to 325 degrees F and spray a 9×9-inch baking pan with non-stick spray to prevent sticking.
- Mix blondie batter: In a large bowl, combine the cake mix, vegetable oil, and egg. Slowly stir in the milk, then gently fold in the white chocolate chips. The batter will be thick. Pour this batter evenly into the prepared pan.
- Bake blondies: Place the pan in the oven and bake for 25 minutes or until a toothpick inserted into the center comes out clean. Remove from the oven and allow to cool for at least 30 minutes before frosting.
- Prepare frosting: In a medium saucepan over medium-high heat, bring the salted butter and milk to a boil. Once boiling, remove from heat immediately and whisk in the powdered sugar and vanilla extract until smooth and creamy.
- Add food coloring (optional): Add 1-2 drops of your chosen food coloring to the frosting and mix well to achieve desired color.
- Frost blondies: Spread the warm frosting evenly over the cooled blondies. Decorate with sprinkles as desired.
- Set and serve: Let the frosting cool and set completely before slicing the blondies into squares and serving. Enjoy your colorful treat!
Notes
- Allow the blondies to cool completely before applying the frosting to avoid melting.
- The frosting should be spread warm for easier application but be careful as it will be hot.
- You can substitute white chocolate chips with other types of chips, such as milk or dark chocolate, for a different flavor.
- For gluten-free version, use a gluten-free cake mix.
- Add sprinkles inside the batter as well for extra fun.
