Instructions
- Preheat the oven: Preheat the oven to 350°F and line two baking sheets with parchment paper.
- Cream the butter and sugars: In a large bowl, cream the butter, brown sugar, and granulated sugar until light and fluffy.
- Mix wet ingredients: Mix in the pumpkin purée, egg, and vanilla until smooth.
- Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
- Combine wet and dry: Gradually stir the dry ingredients into the wet ingredients. Fold in the oats.
- Bake: Drop spoonfuls of dough onto baking sheets and bake for 12–14 minutes.
- Make frosting: Beat together cream cheese, butter, powdered sugar, cinnamon, and vanilla until smooth.
- Frost cookies: Once cooled, frost the cookies with the cream cheese frosting.
