Potato Cheese Stick Dough

Instructions
- Mash the Potatoes: Mash boiled potatoes in a large bowl until smooth and free of lumps to create a soft and pliable base for the dough.
- Mix the Dough: Add the all-purpose flour, grated cheddar cheese, grated Parmesan cheese, melted butter, salt, black pepper, and optional paprika to the mashed potatoes. Combine thoroughly until a soft dough forms.
- Shape the Sticks: Roll the dough out on a floured surface to about 1/2 inch thickness. Cut the dough into 4-inch-long sticks, shaping them evenly for uniform frying.
- Coat the Sticks: Dip each stick into the beaten egg, ensuring it is fully coated, then roll them in breadcrumbs to cover completely for a crispy outer layer.
- Fry the Sticks: Heat oil in a frying pan over medium heat. Carefully fry the coated sticks in batches until golden brown and crispy, about 3-4 minutes per batch, flipping as needed to cook evenly.
- Drain and Serve: Remove fried sticks from the oil and drain on paper towels to remove excess oil. Serve hot with your favorite dipping sauce for a tasty appetizer or snack.
