Description

Polish Dill Soup Delight is a comforting and tangy soup that combines the flavors of dill pickles, fresh dill, and tender vegetables. This easy-to-make soup features sautéed onions and carrots, hearty potatoes, and a creamy sour cream finish, delivering a unique and flavorful twist on traditional vegetable soup. Perfect for a cozy meal, it balances savory and acidic notes, highlighting classic Polish flavors in a warm, satisfying bowl.

Ingredients

Scale

Sauté Base

  • 1 tbsp butter
  • 1 onion, chopped
  • 2 carrots, sliced

Main Soup Ingredients

  • 3 medium potatoes, diced
  • 4 cups vegetable broth
  • ¾ cup chopped dill pickles
  • ½ cup pickle juice

Finishing Ingredients

  • ½ cup sour cream
  • 1 tbsp fresh dill
  • Salt & pepper to taste

Instructions

  1. Sauté Vegetables: In a large pot, melt the butter over medium heat. Add the chopped onion and sliced carrots, sautéing for about 5 minutes until they soften and become fragrant.
  2. Cook Potatoes and Simmer: Add the diced potatoes, vegetable broth, chopped dill pickles, and pickle juice to the pot. Bring the mixture to a boil, then lower the heat to a simmer. Cook uncovered for 15-20 minutes, or until the potatoes are tender when pierced with a fork.
  3. Add Creaminess and Dill: Stir in the sour cream and fresh dill carefully to avoid curdling. Mix well to incorporate the creamy texture throughout the soup. Optionally, blend some of the soup with an immersion blender for a smoother consistency or leave it chunky as desired.
  4. Season and Serve: Season the soup with salt and pepper according to your taste. Serve warm for a deliciously tangy and comforting experience.

Notes

  • For a smoother texture, partially blend the soup with an immersion blender before adding the sour cream.
  • Adjust pickle juice quantity depending on your preferred level of tanginess.
  • Garnish with additional fresh dill or a dollop of sour cream for an extra touch.
  • This soup pairs well with crusty bread or rye toast.
