Soup:

  • 1 tablespoon olive oil
  • 1 small onion (diced)
  • 2 garlic cloves (minced)
  • 2 carrots (peeled and sliced)
  • 2 celery stalks (sliced)
  • 6 cups chicken or vegetable broth
  • 1 cup small pasta (such as ditalini or orzo)
  • 1 cup grated Parmesan cheese
  • 1 Parmesan rind (optional for extra flavor)
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste
  • 2 cups baby spinach (optional)
  • Chopped parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, garlic, carrots, and celery, and sauté until vegetables are softened.
  2. Stir in the broth, thyme, and Parmesan rind. Bring to a boil, then simmer for 10 minutes.
  3. Add the pasta and cook until al dente. Remove Parmesan rind, then stir in grated Parmesan until melted.
  4. If using spinach, stir it in until wilted. Season with salt and pepper. Garnish with parsley and extra Parmesan.
