Soup:
- 1 tablespoon olive oil
- 1 small onion (diced)
- 2 garlic cloves (minced)
- 2 carrots (peeled and sliced)
- 2 celery stalks (sliced)
- 6 cups chicken or vegetable broth
- 1 cup small pasta (such as ditalini or orzo)
- 1 cup grated Parmesan cheese
- 1 Parmesan rind (optional for extra flavor)
- 1/2 teaspoon dried thyme
- Salt and black pepper to taste
- 2 cups baby spinach (optional)
- Chopped parsley for garnish (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add onion, garlic, carrots, and celery, and sauté until vegetables are softened.
- Stir in the broth, thyme, and Parmesan rind. Bring to a boil, then simmer for 10 minutes.
- Add the pasta and cook until al dente. Remove Parmesan rind, then stir in grated Parmesan until melted.
- If using spinach, stir it in until wilted. Season with salt and pepper. Garnish with parsley and extra Parmesan.

- Use any small pasta shape you like.
- For a creamier texture, stir in a splash of heavy cream at the end.
