Mustard Mixture:
- 2 tablespoons Dijon mustard
- 2 teaspoons lemon juice
Panko Crust:
- 1 cup panko breadcrumbs
- 2 tablespoons olive oil
- 1 tablespoon chopped fresh parsley (optional)

Instructions
- Preheat the oven: Preheat the oven to 400°F (200°C) and prepare a baking sheet with parchment paper or grease it lightly.
- Season the salmon: Pat dry the salmon fillets and season both sides with salt and pepper.
- Prepare the mustard mixture: In a small bowl, mix Dijon mustard and lemon juice.
- Coat with panko: In another bowl, combine panko breadcrumbs, olive oil, and parsley. Coat the top of each salmon fillet with the mustard mixture and press the panko mixture onto the top.
- Bake the salmon: Place the fillets on the baking sheet, skin-side down, and bake for 12–15 minutes until flaky and golden brown.
- Serve: Serve warm with lemon wedges.
