Description

This hearty and nutritious One Pot Turkey Lentil Soup is a wholesome meal perfect for chilly days. Packed with lean ground turkey, lentils, and an array of aromatic vegetables, this soup is easy to make and incredibly satisfying.

For the soup:

  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1 medium onion (diced)
  • 3 cloves garlic (minced)
  • 2 carrots (diced)
  • 2 celery stalks (diced)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1 1/2 cups dried green or brown lentils (rinsed)
  • 6 cups low-sodium chicken or turkey broth
  • 1 can (14.5 oz) diced tomatoes (with juice)
  • 1 bay leaf
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups chopped fresh spinach or kale
  • juice of 1/2 lemon

Instructions

  1. Heat olive oil in a large pot over medium heat. Add ground turkey and cook until browned.
  2. Add onion, garlic, carrots, and celery; sauté until vegetables are softened.
  3. Stir in thyme, oregano, and smoked paprika; cook until fragrant.
  4. Add lentils, broth, diced tomatoes, bay leaf, salt, and pepper. Simmer until lentils are tender.
  5. Stir in spinach or kale and cook until wilted.
  6. Remove bay leaf, stir in lemon juice, and adjust seasoning. Serve hot.

Notes

  • This soup can be made ahead and freezes well for up to 3 months.
  • For a thicker texture, mash some of the lentils with a spoon before serving.
