For the Bolognese:

  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 medium carrot, grated or finely chopped
  • 1 celery stalk, finely chopped
  • 1 lb ground beef
  • 1 tablespoon tomato paste
  • 1 can (14 oz) crushed tomatoes
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Orzo:

  • 1 cup uncooked orzo pasta
  • 2 1/2 cups beef broth
  • 1/4 cup whole milk or cream
  • Grated Parmesan cheese and chopped fresh basil for garnish

Instructions

  1. Prepare the Bolognese: Heat olive oil in a large pot over medium heat. Add onion, carrot, and celery; cook until softened. Stir in garlic, then add ground beef and cook until browned. Drain excess fat if needed. Stir in tomato paste and cook for 2 minutes.
  2. Add Ingredients: Add crushed tomatoes, oregano, basil, salt, and pepper. Mix well. Pour in orzo and beef broth, bring to a boil, then simmer for 10-12 minutes until orzo is tender.
  3. Finish the Dish: Stir in milk or cream, cook for 2 more minutes. Serve hot, garnished with Parmesan and basil.
