Instructions
- Brown the Beef: In a large skillet or pot, heat olive oil over medium-high heat. Add ground beef and cook until browned, about 5–6 minutes. Drain excess fat if needed.
- Sauté Vegetables: Add onion, garlic, and mushrooms. Sauté for 4–5 minutes until vegetables are softened.
- Add Flour and Broth: Stir in the flour and cook for 1 minute. Gradually pour in the beef broth, stirring to avoid lumps.
- Season and Cook Noodles: Add Worcestershire sauce, Dijon mustard, salt, pepper, and egg noodles. Bring to a boil, then simmer, covered, for 8–10 minutes until noodles are tender.
- Finish and Serve: Remove from heat and stir in sour cream until creamy. Let rest for 5 minutes before serving. Garnish with parsley if desired.

- For extra richness, add a splash of heavy cream with the sour cream.
