  • 2 celery stalks, diced
  • 2 potatoes, peeled and diced
  • 1 zucchini, diced
  • 1 cup corn kernels, fresh or frozen
  • 1 cup green beans, chopped
  • 6 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Additional Ingredients:

  • 1 cup heavy cream or coconut milk
  • 2 tablespoons all-purpose flour mixed with 2 tablespoons water (optional, for thickening)
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Prepare the Vegetables: Heat olive oil in a large pot. Add onion, carrots, and celery, cook until softened. Stir in garlic.
  2. Cook the Vegetables: Add potatoes, zucchini, corn, and green beans. Pour in vegetable broth. Season with thyme, oregano, salt, and pepper. Simmer until vegetables are tender.
  3. Finish the Soup: Stir in cream and flour-water mixture if using. Simmer until slightly thickened. Remove from heat, stir in parsley, and serve hot.
