1 tablespoon olive oil
- 1 pound ground beef
- 1 small yellow onion (diced)
- 2 cloves garlic (minced)
- 1 (1-ounce) packet ranch seasoning mix
- 1/2 teaspoon paprika
- 1/2 teaspoon black pepper
- 3 cups beef broth
- 1 (10.5-ounce) can condensed cheddar cheese soup
- 2 cups uncooked short pasta (like penne or rotini)
- 1 cup shredded cheddar cheese
- 1/4 cup heavy cream (optional)
- chopped parsley for garnish (optional)
Instructions
- In a large pot or deep skillet, heat olive oil over medium heat. Add diced onion and cook for 3–4 minutes until softened.
- Add ground beef and cook until browned, breaking it apart with a spatula. Drain excess grease if needed.
- Stir in garlic, ranch seasoning, paprika, and black pepper; cook for 1 minute.
- Add beef broth, cheddar cheese soup, and uncooked pasta. Stir to combine and bring to a gentle boil.
- Reduce heat to a simmer, cover, and cook for 12–15 minutes, stirring occasionally, until pasta is tender and most of the liquid is absorbed.
- Remove from heat and stir in shredded cheddar cheese and heavy cream if using. Let sit for 5 minutes to thicken.
- Garnish with chopped parsley and serve hot.
Notes
- You can use ground turkey or chicken instead of beef.
- Add steamed broccoli or spinach for extra veggies.
