Wet Ingredients:

  • 2 large eggs
  • 1/4 cup melted coconut oil or butter
  • 1/3 cup honey or maple syrup
  • 1 teaspoon vanilla extract

  • 1 cup fresh or frozen blueberries

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix dry ingredients: In a large bowl, combine oats, protein powder, baking powder, cinnamon, and salt.
  3. Whisk wet ingredients: In a separate bowl, whisk eggs, melted oil, honey, and vanilla until smooth.
  4. Combine and fold in blueberries: Pour wet ingredients into dry ingredients, stir until combined, then gently fold in blueberries.
  5. Bake: Drop rounded tablespoons of dough onto the baking sheet and bake for 12-14 minutes until set and golden.
