Wet Ingredients:

  • 1/4 cup unsweetened applesauce
  • 1/4 cup honey or maple syrup
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons coconut oil, melted and slightly cooled

Additions:

  • 1/2 cup fresh or frozen blueberries

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Mix Dry Ingredients: In a large bowl, whisk together oats, protein powder, baking soda, salt, cinnamon, and almond flour.
  3. Combine Wet Ingredients: In a separate bowl, mix applesauce, honey (or maple syrup), egg, vanilla extract, and melted coconut oil until well combined.
  4. Combine Wet and Dry Mixtures: Pour the wet ingredients into the dry ingredients and stir until fully incorporated.
  5. Add Blueberries: Gently fold in the blueberries.
  6. Rest Dough: Let the dough rest for 5 minutes to firm up slightly.
  7. Bake: Scoop dough onto the baking sheet and bake for 10-12 minutes until golden.
  8. Cool: Cool cookies on the pan for 5 minutes, then transfer to a wire rack to cool completely.
