- 1/2 cup light corn syrup
- 1/2 cup water

- 1 (3 oz) box flavored Jello (any flavor)
- 2 large egg whites (room temperature)
- 1/8 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 cup chopped pecans or walnuts (optional)
Instructions
- Prepare Sugar Mixture: In a medium saucepan over medium heat, combine sugar, corn syrup, and water. Stir until sugar dissolves, then bring to a boil without stirring further. Cook until the mixture reaches 260°F on a candy thermometer (hard-ball stage).
- Beat Egg Whites: In a stand mixer, beat the egg whites and salt on high speed until stiff peaks form.
- Combine Ingredients: When the sugar mixture reaches temperature, carefully pour it into the beaten egg whites while mixing on medium speed. Add the dry Jello powder and vanilla extract, then beat on high speed until thick and glossy.
- Add Nuts and Shape: Fold in chopped nuts if desired. Drop spoonfuls of the mixture onto waxed paper and allow to set for 1–2 hours.
